Crushed Strawberries with Lemon Sorbet
Ingredients (Serves 4)
Sorbet
1 lemon, quartered with pips removed
250g/9oz caster sugar
1 ripe banana, peeled
500ml/17fl oz freshly squeezed lemon juice
Strawberries
500g/1lb 2oz strawberries
2 tablespoons caster sugar
Method
1) To make the sorbet, place the lemon quarters, sugar and banana in a food processor (it is easier to do this in two batches). Pulse until the mixture is coarse with very small bits of lemon peel still visible.
2) Put this mixture into a large bowl and stir in the lemon juice. Freeze in a suitable container or alternatively churn in an ice-cream maker. If freezing, check the sorbet after an hour and mash with a fork. Check this every 40 minutes until it reaches a smooth consistency. This should take around 3-4 hours.
3) Roughly chop the strawberries and mix with the caster sugar. Place in individual bowls and cover with the sorbet. Serve immediately.
